Healthy Fall Foods

Which healthy fall foods will you prepare?

It is definitely fall here in south eastern Oregon. The leaves on the trees are starting to change colors, and there is a noticeable chill in the air. Although, summer is by far my favorite season, I am beginning to appreciate fall, and one of my favorite things about fall is some of the great  and healthy fall foods that ripens this time of year. Healthy fall foods like apples, concord grapes (a friend has vines at his house that he should be calling us to pick soon), squash, and pumpkin add color and a wealth of nutrients to your diet.

Here is a list of 25 healthy fall foods to add to your eating plan in the next couple months. While the old staples like apples and pumpkins are on it, it also contains some healthy fall foods I haven’t even tried yet – things like parsnips and kabacho squash. There are also links to some great-looking recipes – like Wine-Poached Pears with Yogurt (yes, please) and Dijon Chicken with Pomegranate Glaze.

I think I will try to add one new healthy fall food to our meal plan every week or so and see which ones we like best.
