Confession time. I don’t love chicken. I know – it’s weight loss guru treason to say that. Chicken’s a high protein food. It’s lean – low in fat and calories. And it comes in handy single serving pieces. It’s a mainstay in any body building or weight loss nutritional program.

And I don’t like it.

Take that – chicken.

But, I still buy it from time to time. For all those reasons listed above. So today, while I was staring at my pack of chicken thighs thinking “What am I going to do with these?”  I thought of an old comfort food recipe. One of those recipes you find in the cookbook the local ladies’ groups put together back in the 60’s. The kind full of quick and easy recipes that incorporated canned soup and french-fried noodles. The kind of recipe Alice probably threw together on the Brady Bunch when she was in a hurry to meet Sam and go “bowling.”

The recipe I’m talking about is one that featured chicken breast and mayonnaise.

Now the whole of idea of cooking with mayonnaise kind of freaks me out – and reminds of me of the How I Met Your Mother 7-layer salad nightmare.


So, I looked around the kitchen and tried to find a healthy alternative to good old mayo (and I’m not talking about non-fat or low-fat or whatever crazy chemical mess they’re doing to try to make mayonnaise seem healthier. Seriously, if mayo is the thing that does it for you, stick with the real thing. It’s an all around a healthier chose.)

The thing I find is Greek yogurt. Right consistency. Healthy fat. Plus all the yumminess of yogurt. I’m in.

Here’s the Greek yogurt chicken recipe I pieced together to make the first chicken dish I’ve actually liked in a long time.

Seriously. I’m thinking of buying some chicken and making it again in the next few days. It really was that good. (And that easy).

Greek Yogurt Chicken

4 boneless/skinless chicken thighs or breasts (whatever you like)
3/4 to 1 cup plain Greek yogurt
1 tsp garlic powder
1 1/2 Tsp seasoning salt
1/2 tsp pepper
1/2 cup grated Parmesan or Italian blend cheese

1. Preheat oven to 375 degrees
2. Line baking sheet with foil and spray with olive oil or cooking spray
3. Combine all the ingredients except the chicken in a bowl
4. Coat the chicken pieces with the yogurt/spice/cheese mixture
5. Bake for 35-45 minutes (depending on the size of your chicken pieces)

That’s it! Quick and easy – and seriously good.
